So I Skipped the Mystery Ingredients and Made My Own

No-Bake Protein Date Cupcakes
Gluten-free · Makes 6 cupcakes
Ingredients
- 18 Deglet Noor dates (3 per cupcake), pitted
- 1 cup plain nonfat Greek yogurt
- 2 scoops vanilla protein powder
- 6 tablespoons Healthy Omega 3 Blend (about 1 tablespoon per cupcake)
- 2–3 tablespoons melted dark chocolate (70% cacao or higher)
Instructions
- 1Line a muffin tin with 6 paper liners or silicone cupcake cups.
- 2Press 3 pitted dates into the bottom of each liner, gently flattening them together to form a naturally sweet "cake" base.
- 3In a small bowl, whisk together the Greek yogurt and protein powder until smooth and fluffy.
- 4Spoon or pipe the yogurt mixture evenly over each date base.
- 5Sprinkle each cupcake with about 1 tablespoon of Healthy Omega 3 Blend for crunch and a boost of healthy fats, fiber, and plant-based omega-3s.
- 6Finish with a light drizzle of melted dark chocolate.
- 7Refrigerate for at least 30 minutes before serving, or enjoy straight from the freezer for an ice cream-like treat.
These keep beautifully in the refrigerator for up to 4 days or in the freezer for up to 1 month. They are perfect for meal prep, an afternoon pick-me-up, or a protein-packed dessert when you are craving something sweet.
